Ingredients
2 servings
1chicken breast
2 Tbspavocado oil
¼ tspsalt
¼ tspblack pepper
2 Tbspred thai curry paste
0.5shallot
1 tspminced ginger
1 ½ cupschicken stock
0.5can coconut milk
1 tspfish sauce
0.5lime
its juice
200 gramsnoodles
I used It’s Skinny Pasta
1green onion
for topping
2 Tbspcilantro
chopped, for topping
1red jalapeño
for topping
1 Tbspsesame oil
for topping
Instructions
Step 1
Place a pot over high heat. Add in avocado oil, chicken breast & salt and pepper. Once cooked, remove chicken breast.
Step 2
Add in chopped shallots, minced ginger and red thai curry paste.
Step 3
Once combined, pour in chicken stock to deglaze the bottom of the pot.
Step 4
Pour in coconut milk, fish sauce and lime juice. Reduce heat to low and let simmer for a few minutes.
Step 5
Drain noodles (or cook them if needed... mine are already cooked). Pour noodles into bowl with cooked chicken.
Step 6
Pour broth on top and top it all with green onions, cilantro, red jalapeños and sesame oil.
