Grated Tofu & Roast Veggies with Zesty Yoghurt

You guys know I love tofu so much. I always say tofu is the best blank canvas ingredient that can be transformed into anything!
I have been OBSESSED with having a base of yogurt for all my savoury dishes lately. The creamy but fresh zestiness (I made a new word) of the yogurt goes sooo well with crispy roasted veggies and tofu.

½ cupGreek yogurt
plant based Greek yogurt, Coconut or soy

0.33cucumber
grated and water squeezed out

1garlic clove
minced, or 1 tsp garlic powder

1 tsplemon juice

½ tsplemon zest

salt

Instructions
Step 1
Preheat oven to 180C
Step 2
Lay veggies on a baking tray lined with baking paper, brush with oil, salt and pepper and bake for 25 minutes
Step 3
Meanwhile combine all of the tofu ingredients in a bowl then fry in a dash of olive oil until crispy
Step 4
Then whisk all the yogurt ingredients together until combined
Step 5
To serve, spread the yogurt over the bottom of a flat bowl, then add the veggies and tofu. Top with coriander and an extra drizzle of olive oil and enjoy!
