The ultimate tofu recipe! Italian seasonings give these crumbles true sausage flavor while oven roasting gives meaty texture. Great for any Italian dish like pizza or pasta – if you can keep yourself from eating them all fresh out of the oven!

1 packagefirm tofu
or extra firm, drained, rinsed, and pressed
2 Tbscoconut aminos
2 tspmaple syrup
1 pinchdried chili flakes
1 dropliquid smoke
optional
½ cupred onion
diced
2 Tbsnutritional yeast
1 Tbstahini
1 Tbslow sodium soy sauce
1 Tbswhite miso paste
or yellow
2 tsponion powder
1 tspfennel seeds
1 tspsmoked paprika
1 tspdried oregano
¼ tspdried rubbed sage
¼ tspdried thyme
¼ tsprosemary
¼ tspblack pepper
Instructions
Step 1
Remove the tofu from the packaging and rinse with water. Using your preferred method, press your tofu for 10 - 15 minutes.

Preheat your oven to 375°F (190°C). Line your baking sheet(s) with parchment paper or silicone baking mat(s).

In a mixing bowl, whisk together the coconut aminos, tahini, soy sauce, miso, onion powder, maple syrup, crushed fennel seeds, smoked paprika powder, oregano, thyme, sage, rosemary, black pepper, dried red chili flakes and liquid smoke (if using) until smooth.

Step 4
Crumble the tofu into small pieces and place it into the mixing bowl. Add the onion and stir until everything is well coated with the marinade.

Add the nutritional yeast and stir again, continuing to break down the size of the tofu crumbles.

Evenly spread the mixture out onto your baking sheet(s). Bake for 35-40 minutes, stirring every 15 minutes, until golden brown and chewy. Break up any large chunks of tofu as you stir. If using multiple baking sheets that can’t fit on the same oven rack, we suggest moving the top baking sheet to the bottom rack and the bottom baking sheet to the top rack after you stir. This will help your tofu to bake more evenly.
