For the yeast

Instructions
Activating the yeast
Step 1
1. Whisk the warm water, 2tbsp sugar and yeast in a bowl / mug. Leave to rest for 5 minutes until a light froth forms, this means the yeast is working
For the dough

2. Heat the milk in a microwave until warm to touch. Then melt the butter in a separate bowl.
Step 3
3. Add the milk, sugar, salt, eggs, butter, and half of the flour into bowl. Slowly start mixing whilst adding in the yeast mix, then add in the remainder of the flour until you have a smooth dough with a bit of stickiness
Step 4
4. Knead the dough for a few more minutes either by hand or mixer with a dough attachment. Don’t over mix knead until it lightly spring back once you press you mr finger on it.
Rising
Step 5
5.Lightly grease a bowl with a nonstick spray or oil, turn the dough around the bowl to give the dough a thin coat. Cover with a damp tea towel or clingfilm and leave to rise in a warm area for 1 and 1/2 hours until doubled in size.
Shaping the dough

6. Punch down the dough to release the air in the dough. Roll out on a slightly floured surface to a 1/4 inch thickness, cut out the shape of the doughnuts with a circle cookie cutter and a smaller circle to create the hole. Leave to rest for 10 minutes
Cooking

7. Use a large pot and pour vegetable oil, enough so the doughnuts can float, and heat until 375’c (about 11 on induction hob)

8. Carefully drop the doughnuts into the oil and cook on each side for about 1 minute until they are a light golden brown, drain on a cooling rack or kitchen roll to remove excess oil.
Decorating

9. For sugar doughnuts roll around in the prepared granulated sugar once slightly cooled from the oil.

10. For chocolate glazed doughnuts, Either Drop the doughnuts in a thin original glaze to create a base, wait to dry then dip into the chocolate glaze Or Dip into chocolate glaze, add preferred sprinkles

11. For original glazed,
Cover all of the doughnut In a thin glaze
For the vanilla Glaze

12. Sieve the icing sugar into a bowl and slowly add in the milk and vanilla gradually to create a smooth glaze.
For the chocolate glaze

13. Melt the chocolate and leave to cook whilst you prepare the rest of the ingredients. Sieve the icing sugar and cocoa powder into a bowl. Gradually add in the wet ingredients same as you did in the last step
