This gut healing hot pink cabbage slaw is one my favorite recipes that I love to pair with all types of dishes! It’s flavorful and delicious as well as being so beneficial to your gut health and is overall immune-boosting. Vegan, gluten free & soy free!

Instructions

Step 1
Thinly slice the cabbage using a a sharp knife or a mandoline slicer (should yield about 4 cups of cabbage).
Step 2
Thinly slice half an apple and chop into 1 inch bite sized pieces.
Step 3
Add the cabbage and apples to a large bowl.
Step 4
Then add in all remaining ingredients (except for roasted cashews) to the bowl and mix to combine thoroughly.
Step 5
Let it marinate either at room temp or in the refrigerator for at least 2 hours or overnight (this allows it break down and provide a great texture)
Step 6
Before you're ready to serve, add in roasted cashews (this allows them to stay crunchy and adds nice texture)
Step 7
Enjoy!

Store in an airtight container for up to 3-5 days refrigerated.
