Step 1
Preheat the fan oven to 180 degrees Celsius. Place the dates in a pot with the water and bring to a boil, reduce heat to low, stirring frequently. The dates should soften and turn to a paste

Pour the contents of the pot into a blender with the bananas, flax seeds, and vanilla powder. Blend until smooth.
Step 3
In a large mixing bowl, sieve in the flour, baking powder, bicarbonate soda, cinnamon, ginger, and cardamom. Pour the contents of the blender into the mixing bowl and mix well.
Step 4
Line a loaf tin with baking paper and pour the mixture in. May require a spatula to push the mixture into the corners of the tray. Sprinkle walnuts over the loaf, and place in the oven to bake for approximately 45 minutes.
Step 5
Remove from oven, place a knife in the center, check if the knife comes out clean (cooked). Let the loaf cool for 20 minutes then you can slice it up and eat! Toasted with some sliced banana and coconut yogurt is how I love it.
