Step 1
on a sheet pan, toast the oats in the oven for a few mins at 350.
Step 2
in a saucepan over medium heat, melt butter, brown sugar, honey and salt together and stir until the sugar dissolves. let simmer for 2 - 3 minutes. remove from heat and stir in vanilla and allow to cool slightly.
Step 3
combine toasted oats and rice cereal in a large bowl. pour honey mixture on top and stir to coat. allow to fully cool before stirring in chocolate chips.
Step 4
line a 12 x 16 cookie sheet with plastic wrap and spread oat mixture evenly (buttered hands help prevent sticking!)
Step 5
even everything out with a rolling pin, using the cookie sheet as a guide. sit at room temp for a few hours before cutting. refrigerating speeds up the process but it makes the bars more prone to crumbling. store in an air tight jar.
