Instructions

Step 1
Heat 2 tbls cooking oil, splatter mustard seeds and split urad dhal. Add cut bitter gourd, tamaring water, pinch of turmeric, asafoetida. Cook until botter gourd softens with lid on. Remove lid, add tomatoes, crushed garlic. Sprinkle water if needed, cook few more min. Then add sweet chili sauce, kashmiri chili powder, szechwan paste, jaggery powder, curry leaves and cook slowly until water is absorbed and bitter gourd looks roasted. Lower the heat, add remaining oil, curry leaves, cilantro and cook a few more minutes. Turn off stove and serve.
