Tuscan Tomato Chicken Spaghetti

Instructions

Step 1
Preheat oven to 400 degrees. Cook spaghetti according to package directions. Reserve 1/2 cup of pasta water for later.
Step 2
Cut tomatoes into 8 wedges or so each. Line baking sheet with foil. Place tomato wedges on sheet and drizzle with olive oil and 1 tsp of tuscan heat spice, salt, and pepper. Roast in oven for 20 minutes or until softened.
Step 3
Season chicken with remaining tusxan heat spice, salt, and pepper. Heat a tbsp of oil in a skillet over medium high heat. Add chicken and cook until no longer pink. Turn off heat
Step 4
Melt 1 tbsp butter in a pot over medium low heat. Wish in lemon zesr, cream cheese, and 1/3 cup of pasta water. Mix until smooth.
Step 5
Stir in spaghetti, 2 tbsp of butter, garlic, half of the parmesan cheese, green onion, and juice from half of the lemon. Let it thicken. If too think, add more pasta water.
Step 6
Divide pasta between plates and top with roasted tomatoes and chicken. Garnish with remaining parmesan.
