KETO CHAMPORADO (Chia Seed Chocolate 'Porridge')

Deliciously low carb chocolate 'Porridge'. Officially it's Filipino so it's a porridge, but I think it tastes more like a rice pudding. Substitute vanilla for rose essence if you don't like the taste, and coconut cream works instead of double cream

Instructions
Step 1
Bring water to boil, add chocolate pieces and cocoa powder. Keep heat at slow simmer.

80% dark chocolate30g

once dissolved/melted add stevia powder and stir until fully dissolved (2 mins)
Step 3
turn off heat and add the cream, then when it's stirred in, add the Chia seeds and stir to combine. The seeds may initially sit on the surface, but give them a manual whisk and in 30s they'll all have combined
Step 4
once everything is mixed together, throw a lid on your pan and set aside for 20 mins to let the Chia seed absorb
Step 5
after 20 mins, remove the lid and add a teaspoon of cinnamon, as well as the teaspoon of rose essence. Mix will with the hand whisk
Step 6
eat as much as you like while hot, garnished with strawberries and cream. then when cool, place in the fridge. when ready for more you can heat it on the hob or in the microwave but my secret is to love it cold...
