1 ½ cupsedamame
0.5 headred cabbage
0.5 headgreen cabbage
2bell pepper
sliced, red or orange
2carrots
shredded
1 bunchgreen onion
For the dressing
Instructions
Step 1
First, steam your edamame for 5 minutes or until soft. Once cooked, run it under cold water to cool.
Step 2
Slice up your veggies. Shred your cabbage and carrots, julienne your bell peppers, and roughly chop your green onions and parsley.
Step 3
Add all of your veggies into a bowl, along with your cashews and edamame.
Step 4
Add the dressing ingredients into a small bowl and whisk to combine.
Step 5
Drizzle the dressing over your veggies, toss, and enjoy!
