12 ozChicken Breast
Raw

1Bell Peppers

3 TbspJasmine Rice
uncooked

1 cupSalsa Verde

4Whole Grain Tortillas

½ cupMozzarella Cheese
Low-Fat, Shredded

Instructions
Step 1
1. Add the raw chicken, chopped bell peppers, uncooked rice and salsa to a crockpot and cook on low for 4-6 hours; shred the chicken. Weigh the mixture and divide by the number of servings to get the amount needed to fill each serving.
Step 2
3. Lay out the tortillas and evenly distribute the chicken mixture and the filling (2 Tbs mozzarella, 1/2 Tbs cashew sour cream) per serving to each one. Roll up tight.
Step 3
4. Crisp in a panini maker/sauté pan for about ten minutes or until heated through. Garnish each burrito with 20g avocado, 1 C shredded lettuce and cilantro.
