The Pulled Pork
1.8kgboneless pork shoulder
2 tspsalt
½ tspmsg
2 Tbspsoft brown sugar
1 Tbspsmoked paprika
2 tspcumin
2 tspgarlic granules
1 tspwhite pepper
1 tspcayenne pepper
1 tspchilli powder
1 tspthyme
3onions
1 bulbgarlic
500mlcider
4 Tbspcider vinegar

Instructions
The Pulled Pork
Step 1
Mix the salt sugar and spices and cover over the pork shoulder
Step 2
Roughly cut the onion and separate the garlic cloves and add to the bottom of the slow cooker with the cidre and cidre vinegar
Step 3
Place the grill plate on top and rest the pork on.
Step 4
Tip over any excess spices and slow cook on low for 8 hours
Step 5
Remove the pork and a mug of the juices from the bottom to make the BBQ sauce with extra brown sugar, vinegar, and equal parts cornflour and water slurry
Step 6
Wrap the pork in foil and set aside or in a warming oven at no more than 120C
The BBQ Rice
Step 7
Wash the rice and tip into the slow cooker and add the can of black beans and coconut milk with some extra salt and MSG
Step 8
Mix it around and slow cook on high for 1 hour
Step 9
Tip out the rice into a large bowl with kitchen roll or a tea towel over the top followed by a lid and set aside
The Calzones
Step 10
Mix the water yeast and sugar and let sit for 10 minutes
Step 11
Combine in a bowl with the flour, salt and oil and knead for 10 minutes to work into a dough
Step 12
Leave in an oiled bowl covered with cling film for 1-2 hours until doubled in size
Step 13
Split into 8 pieces and ball up tightly, and leave on a floured tray covered with cling film for 1-2 hours until doubled in size
Step 14
Roll each piece out on a floured surface to a 10 inch disk and lay some rice, pulled pork, BBQ Sauce and any extras - only stuff that can get cooked, then wet the edges, fold the sides and roll up into a burrito
Step 15
Slide into a 400C pizza oven to cook for 60-90 seconds, or in a 240C oven for 8 minutes
Step 16
Serve up with salsa, sour cream, and guacamole for dipping
