For the Dough

375gall-purpose flour

12gsugar

5gsalt

45mlvegetable oil

1 cupunsalted butter
cool, cut into pieces, does not have to be ice cold

¼ cupwater
cool

10mlwhite vinegar
or lemon juice
For the Filling

For the crust
Step 1
Add the flour, sugar and salt to food processor and give it a few pulses. Add the oil and blend in until the flour looks evenly crumbly in texture.
Step 2
Add the butter and keep pulsing until rough and crumbly but small pieces of butter are still visible. Stir the water and vinegar (or lemon juice, if using) together and add all at once to the flour mixture, mixing just until the dough comes together.
Step 3
Cut and peel apples, then add sugar, nutmeg, lemon juice and cinnamon
Step 4
Shape the dough into 2 disks, wrap and chill until firm, at least an hour.
For the filling
Step 5
Melt butter and cook apples then add cornstarch and cook until juice thickens
For the pie

Assemble pie
Step 7
Mix egg and cream and brush the crust with it

Cook 45 mins on 180°C

Cover edges of dish with foil
