MEXICAN MEALS FOR WEIGHT LOSS: CEVICHE DE PESCADO 🐟 The hardest part about preparing this classic mexican seafood dish is waiting for the fish to cook in the lime. This dish will easily be on your weekly rotation during the summer because it requires no heat. You can serve it alone, it’s technically a salad or enjoy it on some air fryer tostadas like me!

Instructions
Step 1
1. Squeeze juice from limes.
Step 2
2. Finely white fish into tiny pieces (the smaller, the better) and place in a large bowl. You can also pulse it in a blender.

3. Add lime juice to the fish. Season to taste (I add 1 tbsp salt and 1/2 tbsp pepper).
Step 4
4. Cover and store in fridge for a minimum of 4 hours but better if left overnight.

5. Finely chop the cilantro, tomatoes, red onion, and grate carrots.
Step 6
6. OPTIONAL: strain lime juice from fish and squeeze remaining juice from fish. Add fresh lime juice to the fish. This will require double the limes.

7. Add all chopped vegetables to the fish. Add additional seasonings if needed.
Step 8
8. Store in fridge for a minimum of 30 minutes.

9. Either mix in avocado directly into ceviche or slice when ready to eat.

10. Air fryer tostadas: Air fry tortillas at 390° F for 4 minutes, flip, and cook for an additional 3 minutes. (The tortilla will fly if you don’t put it under the tray or weigh it down with an air fryer safe dish)

11. 1 SERVING: 3 air fryer tostadas and 6 ounces of ceviche (2 ounces per tostada). Topped with 50 grams of avocado.
