An easy sandwich for a quick lunch at home or in the office. This version is with coppa, gorgonzola cream and pickled mushrooms.

Instructions
Step 1
Cut the bread in half and spread some mayo on both sides.




Step 2
Put the gorgonzola cheese into a small pot and let it melt on a low heat. Add few drops of milk to make it creamy. Remove the pot from the stove and let the cream cool down for a couple of minutes before using it.




Step 3
Place some salad and tomato slices on the bottom side. Add the pickled mushrooms, coppa and the gorgonzola cream.





Step 4
Add some other slices of coppa and some more gorgonzola cream on top and close your sandwich before warming it up for a few minutes.
