This recipe is for 2 X 12" pizzas. The dough or the made pizzas can be frozen making it easy to portion.

Dough / Bread
Step 1
Mix 300g of the four, the yeast, a pinch of salt, 300ml of lukewarm water and a tablespoon of oil together.

It will be very sticky and this is perfect, you will want to cling film the top of the bowl and leave this in a cool space for around an hour ( I usually do this the day before and leave it in the fridge)

After the dough has rested you will want to incorporate the other 150g of flour.

Next is the tough part you have to kneed the dough thoroughly, I would suggest around 10minutes.

Lightly oil a clean bowl and place your dough inside, drape a cloth on top and leave the bowl in a warm place for around 30 minutes
Step 6
Split the dough into 2, roll flat (it will rise during cooking) and the dough is ready.
Sauce

Simmer the passatta, garlic puree, sugar and herbs for 5 minutes. alternatively you can purchase pre made sauces.
Topping
Step 8
The trick with the topping is less is more. Add a thin covering on the pizzas with the sauce.
Step 9
Slice / tear the mozzarella and split equally between the pizzas.

Split the pepperoni between the 2 pizzas. or any other toppings you wish to use. Make sure not to over do the quantity or you will have a soggy pizza.
Cooking

Preheat the oven at 240°c and place a large baking tray upside down in the oven.

Once the oven has hit the temperature add only one pizza that is on a tray on top of the upside down tray. This will insure the base in cooked perfectly.

Cook for 6-8 minutes turning halfway through
