Instructions

Step 1
1. Slice the sausage into rounds and cube the chicken breasts.
Step 2
2. Spray a skillet with cooking spray. Heat to medium/ high heat and add the chicken and sausage. Cook until browned on all sides about 8-10 minutes. Remove from pan.

3. Add the chopped onion, bell pepper, celery, garlic, bay leaf and cajun seasoning to the skillet. Cook over medium/high heat until the vegetables are tender, about 5-7 minutes.

4. Stir in the uncooked rice and cook for about 3 minutes. Stir in the chicken broth, tomatoes, chicken, and sausage. Bring to a boil over high heat. Cover and reduce to low/medium heat. Let simmer for about 20 minutes, stirring occasionally, or until rice is tender.

5. Divide into four equal portions and garnish with sliced green onions.

6. FREEZER DIRECTIONS: Make and freeze without toppings. To thaw place in a crockpot on high for 4-6 hours. Add toppings fresh.
