Instructions

Step 1
Preheat the oven to 375F

Whisk the cocoa powder with the boiling water and set aside to cool
Step 3
Sift the cornstarch, flour, cocoa powder, and salt together

Cream together the butter and sugar until creamy and fluffy, about 1 to 2 minutes
Step 5
Add the coffee and dry ingredients then mix until combined
Step 6
Spoon into a piping bag with a plain, wide nozzle. Pipe in spirals, leaving 2 inches in-between cookies
Step 7
Bake for 10 to 15 minutes, or until set but not browned
Step 8
Melt the chocolate in a double boiler and drizzle on top of the cookies using an offset spatula or fork
