Lamb chops Follow for more. 2.5 pounds lamb chops 1 tomato cut in to chunks 1 seeded and deveined jalapeño sliced 1 thinly slice onion 1 sliced bell pepper 2 peeled and chopped potatoes 1 tsp salt 1/2 tsp pepper 1 tsp garlic powder 1 tsp oregano 2 tbs olive oil For the sauce: 1 6oz can tomato paste 2 cups cup warm water 1/4tsp pepper 1/4 teaspoon garlic powder 1/4 teaspoon salt 1/4 teaspoon oregano Place lamb chops and veggies in to a 13 x 9 baking dish and add seasoning and olive oil toss to coat everything evenly. Bake at 375° for 40 minutes uncovered. While the meat is in the oven combine in a mixing bowl Tomato paste, warm water remaining seasoning and whisk to dissolve the tomato paste. After 40 minutes pour the sauce over the lamb and the veggies and cover with aluminum foil. Place back in the oven at 400° for an additional 1 hour until meat is tender. . . .
