Instructions

Step 1
Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.

In a large bowl, whisk together the all-purpose flour, bread flour, sugar, baking powder, and salt until well combined.

In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
Step 4
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Step 5
Gently fold in the berries and any optional mix-ins you desire.
Step 6
Fill each muffin cup about three-quarters full with the batter.
Step 7
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Step 8
Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer them to a wire rack to cool completely.
