Step 1
The peppers, carefully cut longitudinally, bring a burst of color to the dish, adding a visually stunning element. Their gentle sweetness and mild crunch provide a delightful contrast to the tender chicken.

Heat a large and deep skillet over medium heat. Add olive oil, diced chicken (or turkey), garlic and seasonings such as salt, pepper, and paprika.

Cook the chicken for approximately 10 minutes with the lid on, allowing it to become tender and infused with the flavors.

Add the peppers to the skillet. Allow the peppers to soften and become slightly tender, cooking for an additional 5 minutes.
Step 5
Pour the blended tomatoes into the skillet, with 1 tsp of sugar, creating a luscious base for the sauce. Optionally, you can add some chilli powder or flakes for a nice kick. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together and the sauce to reduce and become thicker.
Step 6
Introduce the fresh spinach to the skillet, or if using frozen spinach, ensure it is properly thawed. Stir it into the sauce and cover the skillet with the lid. Let it cook for approximately 3-5 minutes, allowing the spinach to wilt and incorporate its earthy essence into the dish.
Step 7
Once all the have blended harmoniously and the flavors have developed, it’s time to serve. Spoon the creamy sauce with its vibrant colors and tender chicken into plates while it’s still hot. Serve with steamed rice or with a piece of freshly baked bread.
