High protein, gluten-free, vegan, low in the glycemic index -- but tastes like the real deal! This is the healthy option of the classic "Nutter Butter" (R) Sandwich Cookie. Enjoy!

Step 1
Combine 1 cup almond flour, 1/3 cup maple syrup, 1/2 cup peanut butter and 2 Tbsp peanut butter in a medium bowl. Scoop out small teaspoonfuls and roll them into 3/4" balls. Set balls, in pairs touching, onto cookie sheet lined with parchment paper, Smash each cookie down by using a fork to make cross hatch indentations, making sure the pastor of cookies are connected. Bake at 350 degrees for 10 minutes. Remove from oven, set on a cooling rack, then cool completely.
Meanwhile, combine the remaining ingredients into a small bowl. Spread a thin layer onto the bottom-side of the cooled cookie and topping it with another cookie to form a sandwich. Continue until all cookies are done then ENJOY!
