Instructions
Step 1
Bring a large pot to medium heat with the olive oil then sauté the onion for 3 minutes with a big pinch of salt
Step 2
Add the carrots, celery, garlic, tomato paste and oregano and sauté for a further 5 minutes
Step 3
Add the bay leaf, stock powder and water and bring to a simmer. Cook for about 35 - 40 minutes or until lentils are soft. Add more water if needed.
Step 4
Season with extra salt and pepper as seeded then serve with fresh lemon and enjoy
