Instructions
Step 1
1. Preheat oven to 325°. Trim fat from roast. Place roast on a rack in a roasting pan. Combine garlic and next 3 ingredients; rub garlic mixture over roast. Pour orange juice over roast.
Step 2
2. Insert meat thermometer in roast. Bake, covered, at 325 for 2 hours. Uncover and bake 40 more minutes or until meat thermometer registers 155° (medium). Cover with foil. Let roast stand 10 to 15 minutes before serving.
To freeze it
Step 3
Remove remaining meat from bone. Slice or chop meat as desired. Freeze in a labeled airtight container up to 3 months.
