Step 1
Toss chopped beets and sweet potatoes in olive oil and some salt
Step 2
Roast sweet potatoes and beets at 425 for 30 min
Step 3
Meanwhile sautée diced onions and bacon
Step 4
Mix veggie mix and bacon mix and cooked quinoa in a large bowl, serve with cheese if desired
