Instructions

Step 1
Bring a pot of water to boil. Salt the water for flavor.
Step 2
when the water is boiling, add the spaghetti to the water and boil for 7-8 min or until al dente.
Step 3
Heat the olive oil in a large pan on high heat and add the bacon and garlic.
Step 4
In a small bowl, mix together 1 whole egg, 2 egg yolks, salt, pepper, and most of the cheese but leave a little on the side to top the pasta with.
Step 5
When the pasta is cooked, save a cup of the pasta water and set it aside.
Step 6
Once the bacon is done, take out the bacon and chop it and keep the bacon grease in the pan. Add the cooked pasta to the pan and then add the bacon back in.
Step 7
Once it’s all mixed together, take it off the heat, and stir in the egg mixture. Stir continuously, as you don’t want to let the eggs cook. Pour in some of the pasta water and mix well again, until the pasta becomes coated in a thin creamy sauce.
Step 8
Season with salt and pepper and serve with the sprinkle of Parmesan cheese that was set aside.
