150gdark chocolate
125gunsalted butter
125gcastor sugar
125gground almonds

Icing:
Instructions
Step 1
Grease a 23 cm (9 inch) cake tin.
Step 2
Melt the chocolate in a bowl.
Step 3
Separate all egg yolks and egg whites.
Step 4
Cream butter and sugar together until light and fluffy. Stir in the almonds, egg yolks, breadcrumbs and melted chocolate and beat until well combined.
Step 5
Whisk the egg whites until stiff and fold half into the chocolate mixture, then fold in the other half. Pour into the prepared tin and level the surface. Bake at 180°C (350°F) mark 4 for 40-45 minutes until firm to the touch.
Step 6
Remove from oven and leave for 5 minutes to cool slightly.
Step 7
To make the icing, put the chocolate and cream in a bowl and microwave till melted and blended together as a chocolate ganache.
Step 8
Pour the icing over the cake and gently shake the cake to spread the icing evenly; use a palette knife, if necessary, to ensure that the sides are completely covered. Leave to set in a cool place, but do not refrigerate or the icing will lose its shine.
