500gchicken

1 Tbspghee

1 stickcinnamon

2star anise

4cloves

4pods cardamom

1green chilli
minced

7dried chilli
cut into small pieces

curry leaves

2onions
sliced
2 Tbspshallot-ginger-garlic paste

3 Tbspchilli powder

1 Tbspcurry powder

1 Tbspcoriander powder

1 tspgaram masala

1 tspfennel powder

1 tspcumin powder

1tomato
chopped

1 cupwater

coriander leaves

Instructions
Step 1
Cut chicken into small pieces, wash chicken keep aside.
Step 2
Heat a wok with oil. Add and stir fry cinnamon, star anise, clove, cardamom, green chilli, dried chillies and curry leaves.
Step 3
Add onion, shallot-ginger-garlic paste and fry till golden. Add the chicken pieces and salt to taste.
Step 4
Add chilli powder, coriander powder, garam masala powder, fennel powder and cumin powder. Leave to cook till the masala powders are fully absorbed in the mixture.
Step 5
Add tomato and water and cook on low heat until the chicken is cooked (~20min).
Step 6
Once the chicken is cooked, switch to high heat and continuously stir until mixture is thick/almost dry.
