Instructions

Step 1
In a large skillet heat oil over medium high heat. Add chicken and season with salt and pepper. Cook through, about 5-8 minutes. Remove from pan and set aside.
Step 2
Return pan to heat. Add curry paste and cook, stirring for 1 minute. Add white and pale green parts of scallions and mushrooms and cook until softened, about 3 minutes. Add garlic, ginger, Thai chilies, and lemongrass and cook until fragrant, about 1 minute. Add coconut milk and reserved chicken, adding water or chicken broth if needed to cover everything. Bring to a simmer and cook about 10 minutes until reduced.
Step 3
Add the dark green scallion pieces, fish sauce, brown sugar, lime juice, and basil leaves and stir to combine. Adjust seasoning if needed. Serve hot with steamed rice and lime wedges.
