JENNIFER ANISTON SALAD
The good old Jennifer Aniston salad 😂😂😂
Don’t worry, I’m aware she didn’t actually even make it, but gosh it’s a delicious salad! I’m glad it went viral, as it’s a salad that’s on repeat in our household - if you haven’t tried it, give it a go 🙌
This is also like the one reel I have where Penny isn’t yelling in the background and my awful singing voice isn’t being heard 😂

Serves 4
Ingredients:
2 cups of cooked grain (I used burghul/cracked wheat) - you can also use quinoa, pearly barley, brown rice or freekeh
400g can chickpeas, drained and rinsed
2 cucumbers, diced
1 small red onion, diced
1/2 cup parsley, chopped
1/2 cup mint, chopped
1/2 cup chopped almonds, toasted (or any nut)
1/2 cup crumbled feta
Dressing:
1/4 cup olive oil
1 lemon, juice squeezed
1 tbsp honey
1 tsp tahini
Sea salt & pepper
Method:
1. Cook your desired grain as per packet instruction. Remove, drain, run through cold water and let cool.
2. For the salad: mix all ingredients in a large bowl. Season well.
3. For the dressing: combine all ingredients. Season and adjust to taste.
4. Drizzle dressing over the salad. Toss and enjoy. Season well.
