Honey Cheddar Zucchini Bread

One summer we had an abundance of zucchini in our garden, and we discovered this recipe. It’s so delicious! Especially warm with butter!

Instructions

Step 1
Preheat oven to 400 F. Grease two bread loaf pans. In a mixing bowl, combine flour, baking powder, baking soda and salt. Separately, mix melted butter and honey. Once cooled, mix with dry ingredients and add eggs. Stir until just moistened.
Step 2
Grate zucchini. Add grated zucchini and cheddar cheese to other ingredients and fold into mixture. Don’t over-mix.
Step 3
Divide batter into two portions and pour into two loaf pans. Bake 5 minutes at 400 F, then lower to 350 F and bake for 40-50 minutes.
