Instructions
Step 1
Mix grated potato and onion with a pinch of salt and pepper. Transfer to a muslin and squish any excess water from the potato. Flatten into a patti shape the tighter the better. I used a burger press.
Step 2
Warm a non stick frying pan to medium high. No oil required.
Add potato, and cook slowly with lid in place,. A few minutes either side. You know to turn because the Patti will start to feel firm to the touch and the underneath will have started to brown.
Step 3
Put potato Patti under the grill on low heat to keep warm. Poach eggs by putting cold water in cold pan on hob at full heat. Crack eggs into water. Stir water to stop eggs from sticking. Once the eggs start to float and clouds form on the top the eggs are done. Take off heat.
Step 4
To construct, put Patti on a plate and pour over hot sauce. Spoon cottage cheese over the top and poached eggs on top of cheese. Grind salt and pepper to taste.
