Instructions

Sauce hollandaise

Step 1
Bring a pot of water to a boil.
Step 2
Separate the egg yolk from the egg white and add to a large bowl.
Step 3
Whisk the egg until it becomes creamier. Add the lemon juice and whisk for another minute.
Step 4
Place the bowl on the pot. Reduce the heat to medium. Whisk the eggs until they become really creamy.
Step 5
Melt the butter in the microwave but try not to heat it too much, otherwise the eggs will curdle.
Step 6
Remove the bowl from the pot. Pour in the melted butter a little at a time while continuing to whisk the eggs. The consistency should become a lot thicker.

Poached egg

Step 7
Bring the water to a boil. Then reduce the heat to medium. With a spoon swirl a tornado in the center of the pot. Into this beat the egg.
Step 8
Cook the egg for 2min until the egg white becomes more solid

Bacon

Step 9
Heat the pan. Add the bacon over high heat and fry until crispy and golden brown.

Sandwich

Step 10
Cut the bread in half and toast until golden brown.
Step 11
Spread both halves with butter.
Step 12
Place the bacon on the bottom half. Then top it with the poached egg.
Step 13
Pure a generous amount of the sauce hollandaise on to the poached egg. Season with salt and pepper.
Step 14
Sprinkle on some chives.
Step 15
Stack the other bread half on top and enjoy!
