Step 1
Cook the medallions under the grill for 5 minutes until lightly browned on either side

Meanwhile, cook the egg how you like it - poached, Med or scrambled

Separate and toast the bagels
Step 4
Mash the avocado in a small boal using a fork Max in the lemon juice, cayenne pepper, salt and black pepper
Step 5
To assemble the bagel, spread some cream cheese on gre half of each ba gel, followed by the mashed avocado
Step 6
Add the medallions, egg and cherry tomatoes, and dos the sandwich with the ocher half of the bagel before serving
