Step 1
Prepare all vegetables, add to mixing bowl. Beat egg in separate bowl, add to mixing bowl. Add all other crab mix ingredients except crab and herbs. Mix well. Chop herbs, chop or pull crab as fine as you'd like, then combine everything gently. Cover, store in fridge.
Step 2
Get an inch of oil in on medium-low heat, approx 350 degree goal. In 3 plates, prepare panko, eggs, and flour for breading. Pinch of salt and pepper in all 3.
Step 3
Get chilled crab mix, form into patties. Size is up to you; larger patties will need more time and slightly less heat. Oil on hands helps with sticking. Once formed, bread them. Flour first, then egg, then panko. Don't crowd the pan, fry in batches. Oil should go halfway up crab cakes.
