4slices cheddar cheese

2 tspgarlic powder
½ tspchili flakes
1 tsponion powder

½ cupsugar
¾ cupwhite balsamic vinegar
2parsley sprigs
¼ cupextra virgin olive oil

Instructions
Step 1
In a large bowl, mix the ground beef, egg, breadcrumbs, salt, pepper, garlic powder, chili flakes, and onion powder, until fully incorporated. Split into 4 equal parts and form them into patties a little bit bigger than the bun. Leave those covered in the fridge while you prepare your fries and everything else.
Step 2
For the onion jam, slice 3 onions into medium-sized strips and put them into a medium pot with 1/4 cup olive oil on medium heat. Stir until softened and golden brown, roughly 15 minutes. Add salt and pepper and sprinkle over the sugar without stirring and leave it for about 5 minutes until the sugar melts, creating a golden brown caramel. Stir into the onions and add in the balsamic vinegar. Cook for another 5 minutes until the onion jam is thick.
Step 3
In a small bowl, mix together the mayo, ketchup, mustard, pickle relish. Set aside for later.
Step 4
In a large frying pan, melt 1/2 tbsp butter on high heat, and put in the patties. Cook for about 3 minutes on either side, until a brown crisp has formed. Once they have cooked on both sides, add a slice of cheese on top and cover with a lid.
Step 5
Set the oven to broil and place the buns on an oven tray and brush them with butter. Broil for 1 minute until golden brown but be careful; they can burn very easily. Spread a generous amount of the sauce on the bottom bun. On the top bun, spread a spoonful of the onion jam.
Step 6
Place the burger on the bottom bun and add the optional lettuce and tomato.

Step 7
Peel and slice the potatoes into 1/4 inch thick slabs. Cut them again into equally thick fries.
Step 8
In a large ziplock bag, pour in the cornstarch, salt, and pepper and shake vigorously.
Step 9
Heat up the frying oil in a medium pot. Once the oil starts to ripple, put in a test fry to see if the oil is hot enough.
Step 10
Put half of the fries into the oil and fry for roughly 7 minutes while moving them around frequently.
Step 11
In a large metal bowl, add the melted butter, minced garlic, oregano, basil, parsley and parmesan.
Step 12
Once the fries are done, take them out and put them onto a large paper towel and dab off the excess oil. Put the fries into the bowl of herbed garlic butter and toss them until they are all covered. Sprinkle on the some freshly grated parmigiano reggiano.
