6Champignons
0.5onion
1clove garlic
100mlheavy cream
½ tspsalt
½ tsppepper
1 Tbsptomato paste
50mlwhite wine
1 tspthyme
2 Tbspolive oil

Instructions
Sauce
Step 1
Slice the Champignons, dice the onion and mince the garlic.
Step 2
Heat the oil in the pan. Leave the heat on medium high. Add the champignons and fry for about 2min.
Step 3
Add the onion, garlic and seasoning. Fry for another 2min.
Step 4
Now add the tomato paste and fry for another minute.
Step 5
Pure in the white wine and reduce the heat to medium. Let the wine reduce for about 1-2min.
Step 6
Reduce the heat to low. Pure in the heavy cream and let simmer for another 5-7min.
Burger patty
Step 7
Form 2 equal meat balls. The balls then press flat with your hands and shape. The patties should be bigger than the burger bun as they will shrink in size.

Heat the sunflower oil in the pan. Leave the heat on medium high and add the burger patties. Season with half the salt and pepper. Fry for about 2min.
Step 9
Flip the burger patties and season again. Fry for another 2min.

Grate the Parmesan cheese.

Cut the burger buns in half and toast them until golden brown.
Step 12
Spread the bottom half of the burger bun with a tbsp black berry jam.
Step 13
Now top it with the burger patty, half the sauce and Parmesan.

Stack the other burger bun half on top.
Step 15
Repeat with the other burger. Enjoy!
