Step 1
Bring a large saucepan of water to the boil while you start the sauce. Heat a frying pan until hot, add the oil and sausage chunks and fry for 2-3 minutes until browned all over.
Step 2
Turn the heat down a little, add the onion and cook for about 2-3 minutes until just softened.
Step 3
Add the garlic, grated carrot, basil, cayenne pepper and caster sugar and stir well. Fry for 1 minute then add the tinned tomatoes and bring the sauce to the boil. Turn the heat down so that it's just simmering and cook for 10 minutes.
Step 4
By now, the saucepan of water should be boiling. Add a generous pinch of salt and the pasta. Cook the pasta according to the packet instructions until al dente - set a timer on your phone as a reminder! You definitely don't need any oil in the water for cooking the pasta. The oil will stream straight off the pasta as it comes out of the water so it's a waste.
Step 5
When the pasta has cooked, drain it into a colander or sieve then set it back over the saucepan to collect a little of the cooking water.
Step 6
The sauce will now be thickened and the sausages cooked through, so season to taste with salt and black pepper. Tip the drained pasta into the sauce and toss well to coat - if the mixture is a little dry, add the reserved pasta water and stir through really well then check the seasoning again.
Step 7
Serve with grated cheese and some garlic bread.
