Instructions

Step 1
Put olive oil in a wide pot and cut the dry onion and leek into slices and start sauteing on medium to high heat.
Step 2
If desired, add the chopped fennel and saute until soft.
Step 3
Then we add the spinach (which we have washed and dried well) in portions until we put it all in, keep a little to throw at the end of cooking.
Step 4
Add the rice and then the juice of one lemon.
Step 5
Then put the chicken or vegetable cube and the water for the spinach rice.
Step 6
Cover with a lid and cook on medium heat for about 20 minutes.
Step 7
Turn off the heat once the rice is done and add the chopped fresh onion, dill, parsley, a little olive oil, the juice of the second lemon and the zest.
Step 8
Cover again with the lid and leave for 10 minutes to absorb the liquid.
Step 9
Served with feta if you like which you can crumble into.
