Ingredients

0.5 packagefrozen chopped spinach
6green onions
small
2stalks celery
0.33 bunchparsley
0.33 headromaine
1 stickbutter
softened
¼ cupplain breadcrumbs
1 Tbspworcester sauce
1 tspanchovy paste
Tabasco
1.5 Tbspherbsaint
or Pernod or similar
½ tspsalt
2 x 12oysters
Rock salt
to keep oysters level in baking dish
¼ cParmesan
¼ cbread crumb
Instructions
Step 1
Preheat oven to 400. Place all ingredients except oysters in a food processor and process until pureéd. Drain oysters and recuperate liquid and add liquid to mixture. (If it comes to less than ⅓ cup add a bit of chicken or seafood stock or even water to make ⅓ cup)
Step 2
Place oysters on half shells that you have arranged on a bed of rock salt previously heated in oven. cover each oyster with 2 tbsp spinach mixture
Step 3
Mix parm and bread crumbs and sprinkle 1 tsp on top of spinach. Bake 30 mns.
