It's important to cook this sauce over high heat - not only do you want it ready fast, but the tomatoes really benefit from cooking down quickly.
Heat the oil in a large frying pan over high heat. Add the garlic and let it sizzle and sputter for 1 minute until lightly coloured, then add the tomatoes. Stir well and bring to a vigorous simmer. Cook for 5-10 minutes, stirring often, adding a little pasta cooking water or boiling water as you go, until the tomato pieces have collapsed and formed a lovely thick, chunky sauce.
Season to taste with salt and pepper, then serve with your pasta of choice
