Instructions
Step 1
Sauté your onions , carrots and celery in olive oil and butter just until slightly soft, 1-2 minutes.
Step 2
Add seasonings cook for another 1 to 2 minutes.
Step 3
Add your chicken broth , water and green onions.
Step 4
Bring to a boil.
Step 5
Add your tortellini, let simmer 8 -10 minutes or according to your package instructions.
Step 6
Remove from heat add spinach and stir to wilt.
