Instructions
Step 1
Add ingredients to bowl of stand mixer (dough hook) and mix on low for 3 minutes, or until dough forms into a messy ball. Increase speed and continue to mix for 6 minutes. Transfer to a well oiled rectangular container, cover and allow to rise for 30 minutes.
Step 2
Fold dough in on itself several times. Allow to rise 30 minutes.
Step 3
Repeat folding and allow to rise 30 minutes.
Step 4
Very liberally oil sheet pan, including corners and sides using at least 30 ml olive oil. Flip dough onto sheet pan. Spread out into rectangular shape. Cover and let rest 15-20 minutes.
Step 5
Continue stretching dough into pan. Stretch edge to edge. Cover and allow to rest 15 minutes.
Step 6
Meanwhile, Preheat oven with pizza stone to 550F.
Step 7
Continue to stretch dough until it fills sheet pan. Cover and proof 15 minutes.
Step 8
Top pizza as desired, Bake in pan on top of pizza stone for 18-20 minutes or to desired doneness, rotating halfway through.
