Instructions
Step 1
Place bones in a roasting pan.
Step 2
Caramelize at 375 degrees turn occasionally to brown evenly.
Step 3
Remove bones and place in large stockpot.
Step 4
Remove fat from roasting pan and set aside.
Step 5
Deglaze roasting pan with part of the water.
Step 6
Add deglazing liquid and the rest of the water to the bones in the stockpot covering completely.
Step 7
Bring to boil the reduce to a simmer.
Step 8
Add a portion of the reserved fat to the roasting pan and saute' the onions, celery, and carrots until evenly caramelized.
Step 9
Add the tomato paste and continue cooking until the paste and vegetables are a deep brown color.
Step 10
Add the mixture to the pot.
Step 11
Add the Bay leaves, thyme, crushed peppercorn, garlic, and parsley to the pot and simmer 6-8 hours. Skim froth as needed to remove from stock.
Step 12
Strain and refrigerate/freeze until needed.
