Heat pot, Add Oil

Salt and Pepper Medallions
Step 3
Sear meat on all sides set aside.
Step 4
Add onion and celery - Cook until soft but not brown.
Step 5
Add wine and tomato puree.
Step 6
Add flour.
Step 7
Slowly add the stock.
Step 8
Add the Medallions and Herbs tied together with twine.
Step 9
Place in oven w/lid add foil on top under lid to keep the steam in.
Step 10
Cook at 300 degrees for 1 to 1 1/2 hours under the lid. Check every 30 minutes until fork tender and at 200 degrees.
Step 11
Serve hot. Keep sauce for serving over a side.
