Step 1
In a large pot over medium high heat, melt butter along with olive oil. Add onions, carrots, celery, garlic, stir constantly until tender. Add oregano, salt and pepper cook for another 2 to 3 minutes, stir in lentils, tomatoes and broth than bring to a low boil cooking for about 10 to 15 minutes. Stir periodically. NOTE: If you want a thinner broth you can add water to your desired consistency.10
