Ingredients

14.5 ouncecan diced fire roasted tomatoes
1white onion
small, finely chopped
4 clovesgarlic
large, finely chopped
1 teaspoonground cumin
1 teaspoonmexican oregano
1 teaspoonchipotle chile powder
1 teaspoonsmoked paprika
your choice of mild, medium or hot
3chipotle peppers in adobo sauce
2chicken breast halves
skin-on, bone-in
salt
to taste
freshly ground black pepper
to taste
Instructions
Step 1
Stir together tomatoes, onion, garlic, cumin, oregano, chile powder, smoked paprika, and chipotle peppers in adobo sauce in a large saucepan. bring to simmer over medium-high heat. Place chicken breasts into mixture, season with salt and pepper. Cover and reduce heat to medium-low, simmer 45 minutes to an hour.
Step 2
When chicken breasts are tender and shreddable, transfer to plate until cool enough to handle.
Step 3
While chicken cools, cook sauce over medium high heat until thickened (should have a chunky salsa consistency), 5-10 minutes. Remove from heat and set aside.
Step 4
remove and discard skin and bones from chicken. With two forks, shred the meat. Return chicken to sauce and place over medium heat. cook and stir until chicken is coated and heated through. Season to taste with salt and pepper and serve as desired.
