These are the fluffiest pancakes ever and the creamy peanut butter paired with the strawberry jam is heavenly. These are baked in 12 minutes so no pancake flipping and it’s a great time saver

Step 1
In a large bowl mix flour baking soda baking powder sugar and a large pinch of salt with a whisk

In another bowl beat eggs with buttermilk melted butter and vanilla




Step 3
Pour the liquid into the wet and slowly using the whisk mix until just combined. The batter should look a little lumpy this is perfect
Step 4
Pour the batter into a baking mold I use a silicone burger mold you can use a muffin tray also but spray or grease first . Pour a ladle of batter into each mold then add two teaspoons of jam and two teaspoons of peanut butter to each one . Bake at 200 c fan /400 f for 12 minutes approx or until golden and fully cooked
