Step 1
Melt plant butter in large pot. Add vegetables, saute 5-7 minutes, stirring frequently.
Add chicken stock and cover, cook on medium heat 15 minutes or until vegetables are ork tender. Let cool and use immersion blender to consistency ofyour choice. Add cheese and seasonings, heat to simmer.
Simmer until cheese is melted. Enjoy.
